Mozzarella, Brie, or Cheddar, plus ricotta

Mozzerella and ricotta are a half-day process, and brie take a total of about 3 hours spread over 2 days. Cheddar is a full day event, plus parts of other days for finishing and waxing.

We have aging caves/spaces for different types of cheese. All of our cheese is made with milk from our own yaks.
